Chocolate & Peanut Cheesecake Parfait

A no-bake chocolate-peanut cheesecake parfait, diabetic- and keto-friendly, made with SumSweet+.

Chocolate & Peanut Cheesecake Parfait

Ingredients

  • 8 ounces cream cheese, softened
  • 1/4 cup SumSweet+ Granular
  • 1/2 cup heavy whipping cream
  • 1 tsp vanilla flavor
  • 1/4 cup chopped peanuts
  • 1/2 cup melted chocolate (see below)
  • For the chocolate: 1 baking chocolate bar
  • For the chocolate: 1/3 cup SumSweet+
  • For the chocolate: 3 1/2 tbsp coconut oil

Instructions

  1. Make the chocolate: Melt the baking chocolate, stir in the SumSweet+, then stir in the coconut oil.
  2. Mix the SumSweet+ and vanilla into the cream cheese until smooth.
  3. In a separate bowl, beat the heavy whipping cream until the mixer blades leave track marks. Fold it into the cream cheese mixture and combine.
  4. Layer peanuts, cream, and chocolate until you reach the top of your glass. Keep refrigerated.
