Chocolate & Peanut Cheesecake Parfait
A no-bake chocolate-peanut cheesecake parfait, diabetic- and keto-friendly, made with SumSweet+.
Ingredients
- 8 ounces cream cheese, softened
- 1/4 cup SumSweet+ Granular
- 1/2 cup heavy whipping cream
- 1 tsp vanilla flavor
- 1/4 cup chopped peanuts
- 1/2 cup melted chocolate (see below)
- For the chocolate: 1 baking chocolate bar
- For the chocolate: 1/3 cup SumSweet+
- For the chocolate: 3 1/2 tbsp coconut oil
Instructions
- Make the chocolate: Melt the baking chocolate, stir in the SumSweet+, then stir in the coconut oil.
- Mix the SumSweet+ and vanilla into the cream cheese until smooth.
- In a separate bowl, beat the heavy whipping cream until the mixer blades leave track marks. Fold it into the cream cheese mixture and combine.
- Layer peanuts, cream, and chocolate until you reach the top of your glass. Keep refrigerated.
