Coconut Flour Chocolate Chip Cookies
Chocolate chip cookies from scratch — keto and diabetic-friendly.
Ingredients
- 1/2 cup peanut butter
- 2 tbsp coconut oil
- 1/2 cup SumSweet+ Granular
- 2 large eggs
- 1 1/2 tsp pure vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup coconut flour
- 1/2 cup SumFoods chocolate chips
Instructions
- Preheat the oven to 350°F. Line a cookie sheet with parchment or a silicone mat.
- Place the peanut butter, coconut oil, and SumSweet+ Granular in a mixing bowl. Beat on high until smooth.
- Add the eggs and vanilla and beat again until evenly combined.
- Sprinkle the baking soda, cinnamon, and salt over the top, then add the coconut flour. Beat until the mixture forms a smooth dough, scraping the bowl once or twice. Gently fold in the chocolate chips.
- Portion the dough by heaping tablespoons onto the prepared sheet. Lightly flatten each (they won't spread during baking).
- Bake 7 minutes, until slightly golden at the edges and lightly dry — they'll be very soft.
- Cool on the sheet 3 minutes, then transfer to a wire rack. Repeat with remaining dough.
