Ice Cream Bon Bons
Bite-size vanilla ice cream in a silky chocolate shell. Keto-friendly.
Ingredients
- 4 ounces heavy whipping cream
- 1/2 cup egg white protein powder (optional)
- 1/4 tsp vanilla flavor
- 1 1/2 tbsp SumSweet Granular
- 1 ounce cocoa butter
- 0.5 ounce coconut oil
- 3 tbsp cocoa powder
- 2 tbsp SumSweet+ Confectioners
Instructions
- Ice Cream: Pour the heavy whipping cream, egg white protein powder, vanilla, and SumSweet Granular into a freezer-safe mixing bowl. Whip at the highest speed until smooth and the beaters leave an imprint. Smooth the top, cover, and refrigerate.
- Chocolate Coating: Melt the cocoa butter and coconut oil in a heat-safe bowl or double boiler. Add the cocoa powder one tablespoon at a time, stirring. Stir in the vanilla, then the SumSweet+ Confectioners. Set aside to cool and thicken.
- Assemble: Using an ice tray, spoon chocolate into each cavity and tilt in multiple directions to coat. Freeze 3-5 minutes to quick-set. Fill with ice cream just below the edge, then freeze again to firm up. Spoon chocolate coating over the top to seal, then refreeze to firm up or enjoy right away.
