No Bake Key Lime Pie

A creamy keto-friendly key lime pie with a crust made from almond flour and butter. The filling is simple to prepare using heavy whipping cream.

Ingredients

  • 4 tbsp butter, melted
  • 1 1/2 cups almond flour
  • 1/3 cup SumSweet Granular
  • 1/2 tsp cinnamon
  • 8 ounces cream cheese, softened
  • 1 cup SumSweet Granular
  • 1 cup heavy whipping cream
  • 1/3 cup key lime juice

Instructions

  1. Crust: Combine almond flour, cinnamon, and SumSweet with the melted butter until the butter is evenly incorporated. Using the back of a tablespoon, press the crust mixture into a 9-inch pie pan and set aside.
  2. Filling: Mix SumSweet and lime juice into the cream cheese until smooth. In a separate bowl, beat the heavy whipping cream until stiff peaks form. Fold the whipped cream into the cream cheese and lime juice mixture and combine. Spread into the crust. Refrigerate at least five hours or overnight. Keep refrigerated.
