Lemon Bars

Ingredients

  • Crust:
  • 1 cup fine almond flour
  • 1/2 cup butter, softened
  • 1/4 cup powdered SumSweet+
  • Filling:
  • 2 large eggs
  • 3/4 cup SumSweet+
  • 2 tbsp fine almond flour
  • 1/2 tsp baking powder
  • 2 tbsp lemon juice
  • 1 tsp grated lemon zest
  • Additional powdered SumSweet+ for dusting

Instructions

  1. Crust: In a bowl, combine the almond flour, butter, and powdered SumSweet+. Pat into an ungreased 8-inch square baking pan. Bake at 350°F for 20 minutes.
  2. Filling: In a small bowl, beat the eggs. Add the SumSweet+, almond flour, baking powder, lemon juice, and zest; beat until frothy. Pour over the crust. Bake 25 minutes longer, until light golden brown. Cool on a wire rack, dust with powdered SumSweet+, and cut into bars.
