Lemon Bars
A classic treat — buttery shortbread crust with a tangy lemon filling.
Ingredients
- Crust:
- 1 cup fine almond flour
- 1/2 cup butter, softened
- 1/4 cup powdered SumSweet+
- Filling:
- 2 large eggs
- 3/4 cup SumSweet+
- 2 tbsp fine almond flour
- 1/2 tsp baking powder
- 2 tbsp lemon juice
- 1 tsp grated lemon zest
- Additional powdered SumSweet+ for dusting
Instructions
- Crust: In a bowl, combine the almond flour, butter, and powdered SumSweet+. Pat into an ungreased 8-inch square baking pan. Bake at 350°F for 20 minutes.
- Filling: In a small bowl, beat the eggs. Add the SumSweet+, almond flour, baking powder, lemon juice, and zest; beat until frothy. Pour over the crust. Bake 25 minutes longer, until light golden brown. Cool on a wire rack, dust with powdered SumSweet+, and cut into bars.
