Marshmallow Fluff

Light, glossy sugar-free marshmallow fluff.

Marshmallow Fluff

Ingredients

  • 2 egg whites, at room temperature
  • 1 1/2 cups SumSweet Granular
  • 2/3 cup water
  • 1/4 tsp kosher salt
  • 2 tsp vanilla extract

Instructions

  1. In a medium saucepan, combine the SumSweet+ Granular, water, and kosher salt and cook over medium heat, stirring occasionally with a metal spoon, until the syrup is translucent and no granules remain on the spoon (about 4-5 minutes).
  2. Remove from heat, stir in the vanilla, and set aside to cool slightly.
  3. Add the egg whites to a stand mixer bowl. With the whip attachment, beat on low until foamy, about 2 minutes.
  4. Increase to medium and beat until soft peaks form.
  5. Slowly add the warm syrup, 1-2 tablespoons at a time at first, then pour in the rest.
  6. Increase to medium-high and beat 5 minutes — it will double in size.

Notes

Store in an airtight container up to two weeks in the fridge. If it separates, re-whip on medium-high for 5-6 minutes to restore the glossy texture.
