No Bake Cheesecake

A simple no-bake cheesecake with an almond flour crust and a smooth, lightly tangy filling.

Ingredients

  • 4 tbsp butter, melted
  • 1 1/2 cups almond flour
  • 1/3 cup SumSweet Granular
  • 1/2 tsp cinnamon
  • 8 ounces cream cheese, softened
  • 3/4 cup SumSweet Granular
  • 1 cup heavy whipping cream
  • 1 tsp vanilla flavor
  • 1 tbsp lemon juice

Instructions

  1. Crust: Combine almond flour, cinnamon, and SumSweet with the melted butter until the butter is evenly incorporated into the almond flour. Using the back of a tablespoon, press the crust mixture into a 9-inch pie pan and set aside.
  2. Filling: Mix SumSweet, vanilla, and lemon juice into the cream cheese until smooth. In a separate bowl, beat the heavy whipping cream until stiff peaks form. Fold the whipped cream into the cream cheese and lemon juice mixture and combine. Spread into the crust. Refrigerate at least five hours or overnight. Keep refrigerated.
