Semi-Sweet Chocolate

Make your own sugar-free semi-sweet chocolate for baking or snacking.

Semi-Sweet Chocolate

Ingredients

  • 3 oz cocoa butter
  • 2 1/2 oz unsweetened baking chocolate
  • 3 1/2 tbsp powdered SumSweet+ Granular
  • 1/4 tsp sunflower lecithin
  • 1/8 tsp sea salt, powdered
  • 1 tsp vanilla extract

Instructions

  1. Melt the cocoa butter and baking chocolate in a double boiler over low heat.
  2. Stir in the powdered SumSweet+ a little at a time, then the sunflower lecithin and salt. Heat until smooth and dissolved.
  3. Remove from heat and stir in the vanilla.
  4. Pour into molds and refrigerate at least 30 minutes, until firm.

Notes

Grind the SumSweet+ and salt in a coffee grinder to powder them, or use SumSweet+ Confectioners.
