Vanilla Cake
A moist vanilla cake for any occasion — enjoy plain, frost it, or layer it up for a tiered cake.
Ingredients
- 4 eggs
- 1/2 cup SumSweet or SumSweet+
- 1 tsp vanilla extract
- 2 tbsp coconut oil, melted (or avocado, flaxseed, or almond oil)
- 2 cups almond flour (240 g)
- 1 tsp baking powder
Instructions
- Preheat the oven to 325°F. Grease a 9-inch round cake pan with coconut oil or butter; set aside.
- In a large bowl, whisk the eggs with the SumSweet, oil, and vanilla for 1 minute.
- Whisk in the almond flour and baking powder until fully combined.
- Pour the batter into the prepared pan.
- Bake about 25-30 minutes in the center of the oven, until a skewer inserted in the middle comes out clean.
- Cool 5 minutes in the pan, then turn out onto a rack. Cool 1-2 hours before frosting, or enjoy plain.
