Vanilla Cake

A moist vanilla cake for any occasion — enjoy plain, frost it, or layer it up for a tiered cake.

Ingredients

  • 4 eggs
  • 1/2 cup SumSweet or SumSweet+
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil, melted (or avocado, flaxseed, or almond oil)
  • 2 cups almond flour (240 g)
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 325°F. Grease a 9-inch round cake pan with coconut oil or butter; set aside.
  2. In a large bowl, whisk the eggs with the SumSweet, oil, and vanilla for 1 minute.
  3. Whisk in the almond flour and baking powder until fully combined.
  4. Pour the batter into the prepared pan.
  5. Bake about 25-30 minutes in the center of the oven, until a skewer inserted in the middle comes out clean.
  6. Cool 5 minutes in the pan, then turn out onto a rack. Cool 1-2 hours before frosting, or enjoy plain.
