Vanilla Pound Cake
A rich, tender keto vanilla pound cake.
Ingredients
- 2 cups almond flour
- 1/2 cup softened butter
- 1 cup SumSweet+ Granular
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 cup sour cream
- 2 oz warm cream cheese
- 4 large eggs
Instructions
- Cut the butter into small squares and place in a mixing bowl with the cream cheese; cover and let sit out to warm and soften (or microwave 30 seconds).
- Preheat the oven to 350°F. Generously butter a bundt or loaf pan and set aside.
- Combine the almond flour and baking powder in a bowl; set aside.
- Beat the butter and cream cheese together until well combined.
- Add the SumSweet+ Granular, vanilla, and sour cream; beat well.
- Add the almond flour mixture and mix well, then beat in the eggs.
- Pour into the buttered pan and bake 50 minutes, until a toothpick comes out mostly clean with a few crumbs.
- For best results, cool completely at least 2 hours, preferably overnight, before removing from the pan (it may crumble if removed too soon).
